Cranberry Sauce

Cranberry Sauce
Every year, when the fresh cranberries come to the grocery stores, I buy up a supply of them and make this homemade cranberry sauce. I can it and keep it on the shelf for when the need arises and we want some. 

Cranberry Sauce
Cranberries are one of my favorite things to can. They set up perfectly and look so good when served compared to their jelled store-bought cousins. 

Cranberry Sauce
From Scratch Cranberry Sauce 
Yield 2 cups

Ingredients:
1 tablespoon orange zest
3/4 cup orange juice (juice of 2 large navel oranges)
1/2 cup honey
12 oz. whole fresh cranberries

In a medium sauce pan over medium high heat combine the orange zest, orange juice, and honey. Reduce the heat to low and gently simmer and stir in the cranberries. Cook the berries until they burst, about 15 minutes. Spoon the sauce into a half pint jar and refrigerate for up to 6 hours, then serve. OR:I hot water bath can mine with the hot pack method and spoon the sauce into a half pint mason jar with 1/4-1/2 inch headspace and then process 15 minutes in a boiling water bath. Take the canner off of the heat when done and let the jars sit in the canner for 5 minutes then remove them to counter to be undisturbed for 24 hours. Check seals and store for a year on shelf. Half pint yield: 4 jars

Thanksgiving Tea

 Thanskgiving Tea
This is the little tea I sat up for Thanksgiving. It seemed perfect in front of the fireplace-nice and cozy.

The fare is mini chocolate lava cakes, snickerdoodle scones, and turkey and provolone sandwiches with cranberry sauce.

This holiday is all about feasting, which has me baking and cooking for two weeks. It is special to us also because there is a lot to be thankful for.

I noticed all my dishes were transferware. All the patterns are different, but they still mix well with their autumn colors.

A beautiful teapot in white works well with the table.

Give thanks and enjoy the little things everyday. Pray without ceasing. Be thankful in all circumstances.

Autumn at the Cottage

Autumn at the Cottage
How is autumn going for you? Here at the cottage, I have styled the hutch in the cottage corner for autumn.

This was a past mantel I styled for autumn. I love any chance I have to show off the pewter.

The mantel right now is very simple. It still lingers with a few summer blossoms. Enjoying them till the first frost, which should be this week.

Drying Hydrangeas
I brought the hydrangeas in to dry. I have never tried this before; hopefully it will work. Their color is very lovely.

Autumn Baking
There might also be some baking. I tried a chicken pot pie with puff pastry this weekend. I have never made this from scratch before.

I am dreaming of Thanksgiving tables and what I might use for them. It is the only holiday we still celebrate.

I am also putting more food out for snacks on cozy weekends. The home is your sanctuary away from the noise of the world. What do you do to keep it that way?

Pumpkin Pie Shortbread Bars

Are you a pumpkin pie lover but sorta of meh on the crust. Then this might be a great solution for your pumpkin pie craving. Each year when I make pumpkin pie, I notice, as I am clearing the dishes, that the soggy crust of the pie doesn't get eaten. When I found this recipe, I thought it might be a nice solution to the problem. It has the traditional pumpkin pie custard but a buttery shortbread crust that pairs nicely with the custard.  

Shortbread Crust:
1 cup all purpose flour
1/4 cup granulated sugar
pinch of salt
1/2 cup (1 stick) cold butter, chopped into chunks

Custard filling:
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1 egg, lightly beaten
3/4 cup pumpkin puree
3/4 cup evaporated milk

Maple Cinnamon Whipped Cream:
2 cups heavy whipping cream
1/4 cup granulated sugar
1/2 teaspoon cinnamon
1 tablespoon maple syrup

Preheat oven to 350° F. Spray a 8" x 8" baking pan with baking spray.  Put flour, sugar, salt in a medium bowl and mix.  Add chunks of butter, and cut into with pastry blender till coarse crumbs.  Press into baking dish to create a flat bottom.  Bake for 20 minutes until lightly browned.  

Make pumpkin pie filling. In a small bowl whisk together sugar, cinnamon, salt, ginger, and cloves.  In a large bowl whisk together egg, pumpkin, and the sugar mixture.  Whisk in the evaporated milk.  Pour over the prepared shortbread crust.  Bake at 350° F. for 32-35 minutes. Cool completely. (Can put in fridge for 30 minutes.)  While bars are cooling make the maple cinnamon whipped topping. 

Mix whipped cream with a hand held mixer till has body then add sugar, cinnamon, and maple syrup and continue whipping till you get stiff peaks.  To serve place whip cream in a icing bag topped with desired piping tip and put a decorative dollop of whip cream onto of each dessert square.  
Serves:9-16

*Note:  This is richer than pumpkin pie due to the shortbread crust so, you can serve these as 1-inch squares to get 16 servings.  But, that is a really small dessert.  So you can get more like 9 out of the 8" square pan.  In the picture of the ones I made they are about 1 1/2 inch-squares.

Pumpkin Recipes From The Charm of Home

Today I am sharing a roundup of all of the pumpkin-flavored recipes I have made here at The Charm of Home.  Some of these I have made for a long time, and one recipe here I created myself.

This Pumpkin Spice Latte Cake I created myself.  I often change recipes a bit to make them my own, but with this recipe I got very creative and made it an original.

This is my recipe for Streusal Topped Pumpkin Bread.  I have made this for years for my children.  It was my youngest son's favorite! 

Pumpkin Chiffon Pie: The Charm of Home
 What is fall without a pumpkin pie?  This one can be made regular or Paleo version.  It is the Pumpkin Chiffon Pie

Pumpkin Cake Delight: The Charm of Home
This Pumpkin Cake Delight was so easy with only three ingredients and a dump and bake style recipe.  I had to try it and see if it worked and it did, perfectly.

Pumpkin Maple Cheescake Trifle: The Charm of Home
This Pumpkin Maple Cheesecake Trifle was a showy dessert I had for Thanksgiving.  It was rich and delicious but was very pretty.

Minted Gallery Wall: Spruce Up Your Space for the Holidays

I picked out three art prints that worked well together and grouped them on the wall behind my kitchen table.

I love cow paintings and they had this fantastic art print of cows grazing by the sea titled "Marin Cows," created by Alex Elko.

The next print I chose was this folk art style flag titled, "Rustic American Flag," created by Amy Marsh.

And then one of my favorite pieces which so reminds me of my childhood, is titled "Summer Path," by Stephanie Goos Johnson.

All of them each a beautiful piece of art on their own but even more special in a beautiful wall grouping such as this to create a rustic gallery wall.  A perfect update to my home for some sprucing up before the holidays begin.  I loved the quality of the art and especially how they work together to create a "mood."

I also can not say enough about how well Minted ships and packs their art.  You can rest assured it will arrive in good shape and ready to hang right out of the box!  This is a shot of the cow print as I was unwrapping it.
