Time to Can Tea

This week for tea I am getting ready to can.  Do any of you can?  I have a lot of strawberries and blackberries.  I have already made strawberry jam so, as you can see, the blackberries are ripe and it's time to make something with them.

Tea is in this Royal Albert cup today.  The pattern is Petit Point.  I won that teacup from a dear blogging friend Sandi, at Rose Chintz Cottage.  Thank you Sandi, I am still enjoying it!

I have my vintage apron with chicken scratch embroidery out today. Canning reminds me of my Grandmother and farm living.  The tea cake is blackberry bread.

Blue glass mason jars and The All New Ball Book of Canning and Preserving provided by Ball Canning.  Join me Friday and I will share a recipe out of this cookbook with my blackberries.

Caramel Peach Cake with Caramel Topping

Caramel Peach Cake with Caramel Topping
It is wonderful summertime and I am taking advantage today of the fresh peaches in the grocery.  I made a peach cake with a caramel sauce that is a family favorite!

This cake is so humble to look at but so huge on taste.  It is really hard to get a picture of it that does it justice, but I kept trying.

This picture might be the best to show you how gooey this cake is!  It is also extremely easy to make, most of the ingredients are already in your pantry.  

Caramel Peach Cake with Caramel Topping

Ingredients:
2 1/2 cups sugar
3 eggs
1 1/2 cups vegetable oil
3 cups all-purpose flour
2 teaspoons vanilla
1 cup chopped pecans
2 1/2 cups sliced peaches, fresh
1 tablespoon of fresh lemon juice, tossed with fresh peaches

Preheat oven to 350 degrees.  Cream together sugar, eggs, and oil.  Add flour; mix together until well blended.  Add vanilla, nuts, and sliced peaches already mixed with lemon juice.  Spread into a lightly greased and floured 13 x 9-inch baking dish; bake for 45 to 60 minutes.  Cake is done when toothpick comes out clean.  When cake is done, pour hot caramel topping over it.

Caramel Topping

1 1/2 sticks butter (3/4 cup)
1 cup of packed brown sugar
2 tablespoons milk

Heat all ingredients together over medium heat.  Bring to a boil, stirring constantly.  Let boil about 2 minutes.  Pour over warm cake.

Pour a big cup of coffee and enjoy!

Today's tea is light and lemony due to this delicious Cream Cheese Lemonade Pie.

Do you ever see a recipe and you can't stop thinking about it till you've tried it.  Maybe other people don't do that, but I do. This pie was one of those recipes.

I saw this recipe on Pinterest and it just keep popping up until I made it.  It was a winner of a recipe!  I would really like to try it with key lime flavors.
