Cinnamon Apple Walnut Quick Bread
This time of year, the whole menu changes in the kitchen. I start to bake more and add flavors that definitely reflect the season. This week I made this apple quick bread and it was a welcome treat. 

Ingredients:
1 3/4 cups all-purpose flour
1 cup granulated white sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup applesauce
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups finely chopped apples, peeled and cored
1/2 cup walnuts

Cinnamon glaze:
1 cup powdered sugar
2 tablespoons milk 
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon

Instructions:
Preheat oven to 350°F. Line a loaf pan (9-inch x 5-nch) with parchment paper so that it hangs over the edge of the pan. This will help you lift the loaf out after cooking. 
In a large bowl, whisk together applesauce, eggs, and vanilla.
In a separate bowl, whisk together the flour sugar, baking soda, salt, and ground cinnamon.
Mixing by hand with spatula; mix the wet ingredients with the dry until they are just incorporated. 
Add the apples and walnuts. The batter is very thick. 
Spoon the batter into the lined loaf pan. Bake in a preheated oven for 50 minutes to an hour; until tooth pick comes out clean. Remove the bread from the loaf pan after 5 minutes. Continue to cool on a wire rack. 
Glaze: While bread is cooling, whisk together the glaze ingredients. When bread is cool drizzle the glaze over the top of the bread. Sprinkle with extra walnuts if desired.
