Now that it is autumn, here come the savory dishes and the cozy food. I am a soup fan. I just love to make soup. Today I am sharing a soup I have shared on the blog, but this has an added ingredient: broccoli.
serves 3-4
Ingredients:
1 small onion, chopped
3 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups chicken stock
1 1/2 cups half-and-half
1 cup grated cheddar cheese
1 1/2 cup broccoli, cooked till tender
salt and ground black pepper to tast
In a saucepan, sauté onion in butter for 5-7 minutes, till translucent. Whisk in flour. Add stock and half-and-half. Continue whisking until not lumpy. Cook until thick. Add cheese and stir until melted. Add broccoli, that has already been boiled until fork-tender. Add salt and pepper to taste. Serve hot.
I doubled this recipe. It is a family favorite, so we like the leftovers.

Must be a very good Autumn soup. ( I don’t know what is half and half?)
Catherine half-and-half is half heavy cream and half milk, used as a coffee creamer here in the States. In this recipe use 3/4 cup heavy cream and 3/4 cup milk instead of the 1 1/2 cup of half-and-half. Thanks for pointing that out. Looking at my statistics, I know that these recipes are viewed worldwide. I sometimes forget that ingredients are regional.
