Glazed Cream Cheese Lemon Cookies: The Charm of Home
The lemon fans in my house have been asking me to come up with a new lemon cookie.  I found this recipe that had cream cheese added to it.  It  looked so chewy I thought it would be a great recipe to try.

These cookies have a dough like texture with the zing of the lemon.  They were really delicious and disappeared fast! 


Ingredients:
1/2 cup butter, softened
1/4 cup cream cheese, softened
1 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
2 tablespoons lemon zest
3 tablespoons lemon juice
2  3/4 cup all-purpose flour plus 2 tablespoons
2 teaspoons cornstarch
1 teaspoon baking soda
1/4 teaspoon salt
Icing:
1 cup powdered sugar 
1 1/2 tablespoon water

Combine the butter and cream cheese in a mixer with the paddle attachment.  Cream together for about a minute. Add the granulated sugar and continue to mix.
Add egg and vanilla and continue to beat on medium high speed till light and fluffy, about 5-7 minutes.  Meanwhile mix all of the dry ingredients in a medium bowl.  Add half of the flour mixture and the lemon zest.  Mix.  Then add the remaining flour and the lemon juice.  Mix to combine until the dough starts to form a ball.  Cover and refrigerate dough about 2-3 hours.  
Preheat oven to 350 degrees.  Prepare the baking sheet with parchment paper.  Take about 1 1/2 tablespoon of dough and roll into a ball with your hands then place on the cookie sheet.  Bake for 8-10 minutes.  When you remove from the oven take a spatula and flatten the cookies to about 1/2 thickness.  Allow cookies to cool completely before moving. 
To make glaze: combine sugar and water and whisk in a small bowl.  Whisk until there are no longer any clumps.  Take the cookies and dip the tops into the glaze or drizzle it on top of them and allow to harden.  
Serves: 24 cookies
