Japanese Fruit Pie

The Japanese Fruit Pie has been said to be a Southern alternative to the Pecan Pie.  Whatever it's history it is delicious and one of my favorite holiday pies.  It is a really simple pie too, just mix, pour, and right in the oven it goes.  This is a family recipe we used to make for Thanksgiving.

Ingredients:
1 cup sugar
1/3 cup butter (softened)
pinch of salt
2 eggs (beaten)
1 tablespoon white distilled vinegar
1/2 cup flaked coconut
1/2 cup chopped pecans 
1/2 cup seedless raisins
1-9" unbaked pie shell (regular depth)

Cream butter and sugar with a stand mixer.  Add the salt.  Add in eggs one at a time.  Add vinegar, coconut,nuts, and raisins.  Just mix until blended then pour into pie shell.
    Bake at 325 degrees for 35 -40 minutes. 
    My kids like this pie refrigerated when cooled.  It is great with a scoop of whipped cream or ice cream.

    Sherry, I HAVE to try this. When I was a kid, we used to have Japanese Fruit Cake for Christmas, but it was a pain to make, and I haven't had any since I grew up. I'll bet this has the same taste. Thanks for the recipe. I didn't know there was a Japanese Fruit Pie.
