Lemon Cheesecake Bars

I had the ingredients on hand to make cheesecake and I wanted an easy version to go with my iced tea this week.  I found this recipe on and used it to make the Lemon Cheesecake bars in my tea post.  You can view my tea post here.  
Lemon Cheesecake Bars
1 c. graham cracker crumbs
1/2 c. finely chopped nuts
2 tbsp. sugar
1/4 c. butter, melted
1 (8oz.) pkg. cream cheese, softened
1 (14 oz.) can sweetened condensed milk ( not evaporated)
1/4 c. lemon juice from concentrate
1 egg
1 tsp. vanilla

Preheat oven to 325 degrees.  In medium mixing bowl combine crumbs, nuts, sugar, and butter; mix well.  Press firmly in bottom of a 12x7 inch baking dish.  ( I didn't have this dish so I used 9x13 inch and my bars are thin.)  Bake 10 minutes.
Meanwhile in a large mixer bowl beat cheese until fluffy.  Gradually beat in sweetened condensed milk then remaining ingredients.  Spread evenly over prepared crust.  Bake 20 minutes or until cake springs back when lightly touched. Chill thoroughly.  Cut into bars.  Stored covered in refrigerator.  
Serves 12

There isn't one ingredient in the recipe that isn't delicious. That means combined they are even more delicious!
