Lemon Poppy Seed Tea Cake
Have you ever tried making a quick bread or tea cake in your bread machine? It works very well. I would usually not see the value in using my bread machine this way, but last summer the electric was so expensive we ran the oven as little as possible. The oven also heats the house up in summer and makes it even hotter. There are entire YouTube channels dedicated to people cooking without a kitchen. People in RV's, dorm rooms, rented rooms, etc. So I have decided to use my appliances to replace conventional methods of cooking. I will still use the oven, but I always like to have more than one way to accomplish a goal. This tea cake turned out really nice in the bread machine. The cake was still hot, and when I poured the icing on it, it puddled around the cake on the plate, but it was delicious!

Lemon Poppy Seed Tea Cake
Yield: 8 small servings

Ingredients:
2 sticks or 1 cup butter softened to room temperature
3/4 cup sugar
2 eggs
1/4 teaspoon salt
1 teaspoon baking powder
1 1/4 cup all-purpose flour
1 teaspoon fresh grated lemon zest 
2 tablespoons poppy seeds

Glaze:
1 1/2 cups of confectioner's or powdered sugar, sifted
3 tablespoons fresh lemon juice

Cream the butter and sugar in a large mixing bowl. Mix in the eggs one at a time beating as you add. Add the dry ingredients (salt, baking powder, flour, zest, and poppy seeds) to the wet and mix till just incorporated. Take a long rectangle of parchment paper and place down in the bread machine. This will be a sling to lift the cake out of the bread pan. Take the bread paddle out and puncture the parchment over the bread paddle location, so the paper fits flat against the bottom of the baking pan. Lightly spray it with nonstick spray. Pour the batter into the bread pan. Place your bread pan into the bread machine and select the bake cycle. Mine will bake for one hour. 
To make glaze: Blend the lemon juice with the sifted powdered sugar until to desired glaze consistency reached and pour on cooled cake. Store in airtight container for a few days, up to a week in refrigerator.

So there you have it. A cake in the bread machine! It was tender on the inside with a lovely crust that soaked up the glaze, so yummy. I am going to try more of these. We have been sick recently and I have discovered I can manage a whole week of dump and go Instant Pot meals! Meals that my family really likes and will eat too. The appliances that have come out since I have returned to blogging are fantastic! These are also not heating up the kitchen or using the oven! That will have to be another post.

Hope everyone is feeling well now. I used to have a breadmaker, but don't anymore. I never thought about using it for sweet breads like this...but so smart for saving on oven. My mouth watered just looking at these pics. yum! xo
