The strawberry tart from yesterday's tea is a cinch to make. I have made tarts before; twice, and they were complete flops. But, I am here to tell you this recipe is much easier and worked really well so I felt good about sharing it!
I used a tart pan I was given my sponsor Wholeport.com. It was a really nice pan that was food grade and performed well with the making of this tart.
Mini Berry Tarts or Long Tart (which uses 1/2 the recipe)
Crust ingredients:7 tablespoons butter, melted
2 1/4 cups granola, crushed
6 tablespoons all-purpose flour
2/3 cup packed brown sugar
1 teaspoon cinnamon
Preheat oven to 325 degrees. In a small bowl, combine butter, granola, flour, brown sugar, and cinnamon. Pat crusts into four 4-inch tart pans (I used two tart pans and one long tart pan). Place on cookie sheet. Bake 5-6 minutes. *Note: I cooked the long tart pan about 8 minutes. Cool completely.
Filling:
8 ounces cream cheese, softened
1/4 cup granulated sugar
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
Fresh berries of choice
Combine all ingredients except berries and blend well. Divide filling into 4 tarts or 2 tarts and the long tart pan or with 1/2 the recipe it will fill just the long tart pan. Arrange berries on cheese mixture, Chill at least 30 minutes before serving.

I have a pint of strawberries in the fridge and was planning on using for strawberry tea but I think you have definitely changed my mind and I will probably be baking a tart today.
