Easy Peanut Butter Cookies, The Charm of Home

Ever since I stumbled across this peanut butter cookie recipe it has become my favorite.  It is so easy with only four ingredients.  It is also gluten free for those who need to follow that diet.

Ingredients:
1 cup peanut butter
1 cup of granulated sugar
1 egg, beaten
1 teaspoon vanilla

Preheat oven to 350 degrees.  Can bake on ungreased cookie sheet or parchment paper.  Combine all ingredients.  Roll into walnut size balls.  Place on baking sheet and flatten with fork tines dipped into extra granulated sugar making a criss cross pattern.  Bake 12 minutes.
Yield 18-24 cookies

After these had baked and cooled completely.  I took about 1/2 cup of chocolate chips and melted them for a minute in a ramekin.  Check frequently to get melted to the right consistency.  I spooned the melted chocolate into a pastry bag, snipped the end, and drizzled the chocolate over the cookies.  Make more batches of chocolate as needed depending how heavy you cover the cookies.

I love this kind of cookie---I made an almond butter version with chocolate chips that was wonderful, and now I can't imagine going back to regular cookie recipes. Simpler is better!

I've used this recipe for myself in the past - gluten free now. So this is perfect, but I make a different one for everyone else.
