Northwest Beef and Vegetable Soup

Now that it is chilly everyone has been enjoying a filling bowl of soup.  I love homemade soup and this recipe is a winner because you can keep it in the crock pot and serve from it all day after it has finished cooking. 
The recipe is adapted from the Crock Pot Diet Slow Cooker recipe book, so it is healthy too.

Ingredients:
2 tablespoons of olive oil
1 pound lean stew beef, trimmed and cut into cubes
1 medium onion, chopped
1 clove of garlic, minced
31/2 cups of canned crushed tomatoes, undrained
1 can ( 15 ounces) no-salt added white beans, rinsed and drained
3 carrots, peeled and sliced
2 large potatoes, peeled and diced
1 tablespoon of dried celery flakes
1 teaspoon of dried basil
11/2 teaspoon salt
7 cups of water

Heat oil in a large skillet over medium heat until hot.  Brown beef on all sides, turning as it browns.  add onion and garlic during last few minutes of browning.  Transfer to slow cooker.
Add remaining ingredients to slow cooker.  Gently stir well to combine.  Cover and cook on HIGH 2 hours.  Turn slow cooker to LOW.  Cook on LOW 6-8 hours, stirring occasionally.  Adjust seasonings to taste.
Makes 7-8 servings


See this bowl of soup in front of my...yes...that is my Christmas tree!  It is almost finished being decorated but, we will see if it makes it on the blog.  Last year's tree never made it, the lights kept blowing out.  This year's tree is set up in the "busy( small children)" area, so it might just be fun to see what happens to it!  That is the attitude to have for Christmas right.  Enjoy it, but don't take the decorations so seriously that you can't have them "roughed up" a little by the little people that enjoy it the most.

Soup looks perfect for the chilly weather. I can't believe you have your tree up already! Just like my brother-in-law and his wife, they put theirs up right after Halloween!
