This banana bread is full of chocolate, marshmallow bits, just add the nuts and it could be rocky road banana bread. It is moist and delicious the perfect snack for my hungry boys. I found this recipe at the Picky Palate. I made the first version of this banana bread and it was more like a brownie. Then I took the revised recipe and combined it with three other quick bread recipes to come of with this version. It got good reviews in my house. The boys loved the addition of the chocolate chips.
Ingredients:
1 1/2 sticks of softened butter
1 cup granulated sugar
2 large eggs
1/2 cup sour cream
1 teaspoon of vanilla extract
3 medium-large ripe bananas, mashed
1 1/2 cup of flour
1/2 cup unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon aluminum free baking powder
1/2 cup of marshmallow bits
3/4 cup of chocolate chips, separated (1/2 cup in batter, 1/4 cup on top of bread)
Preheat oven to 350 degrees. Take two loaf baking pans (9x4 inch) and butter and flour them to prepare for baking.
Cream butter and sugar into a large bowl until light and fluffy. Add eggs, sour cream, and vanilla until well mixed. Add mashed bananas, mixing to combine. Add flour, cocoa, salt, baking soda, baking powder, marshmallow bits, and 1/2 cup of chocolate chips stirring to combine. Divide the batter between the two loaf pans, spreading the batter smooth on top and sprinkle the remaining chocolate chips evenly over both loaves of batter. Bake for 50-55 minutes or until a toothpick comes out clean. Remove and let cool for 20 minutes before removing from pan. When cool cut into slices and serve.
Makes 2 loaves
