When I was a girl I remember two cakes my Grandmother made for summer; one was Banana Split Cake, and this Broken Glass Cake. I thought I would be really original and create this cake to look like sea glass, but I Googled it and I am not the first person to think of this. Anyway, it still tasted good with whatever flavor jello you decide to use. Here I have used Berry and Lime flavored jello to get the blue and green sea glass colors.
Ingredients for crust:
2 dozen graham crackers (crushed)
1/2 cup butter (melted)
1/2 cup sugar
Ingredients for cake:
1 small package lime, berry jello
1 1/2 envelopes of unflavored gelatin
1 cup pineapple juice (heated)
1 pint heavy whipping cream
1/2 cup sugar
1 teaspoon vanilla
Make the flavored jello as directed on package. Allow jello to set up. (I left mine in the refrigerator overnight.)
Take the graham crackers and sugar and stir until well blended add in the butter and mix well again. Use 3/4 of the graham cracker mixture and place in the bottom of a 9-inch x 13-inch pan for crust.
Soften the unflavored gelatin in 1/4 cup cold water. Add 1 cup of hot pineapple juice. Stir well and allow to cool, but not to jell completely.
Whip the heavy whipping cream until stiff but not buttery; add 1/2 cup sugar and the vanilla.
Cut the jello into 1/2 inch squares. Fold the cooled pineapple gelatin mixture into the whipped cream and add the jello cubes. Stir gently. Put into the pan on the graham cracker crust. Top the whip cream mixture with the remaining graham cracker crust mixture. Cover with cling wrap and refrigerate overnight to chill and set up.
