Chili Lime Crockpot Chicken

Are you trying to eat healthy for your New Year's resolution?  I have to eat like this all of the time because of allergies, but this Paleo recipe is delicious and good for you.  The extra bonus is that it is a crock pot recipe, so easy!

Ingredients
6 chicken breasts
Dry rub: 1/2 teaspoon sea salt, 1/2 teaspoon black pepper, 1/2 teaspoon ground cumin, 1 teaspoon chili powder, 1/2 teaspoon cayenne powder
1/4 cup lime juice  (1 lime squeezed)
3 cloves garlic  (smashed and then diced)
1 tablespoon olive oil

Wash the chicken breast off and dry with a paper towel.  Dust the chicken with the dry rub evenly coating it with the chili powder, cayenne, and cumin.  Use a gallon size ziplock bag to place the chicken breast in and pour in the garlic, olive oil, and lime juice.   Seal the bag and knead the chicken evenly distributing the lime and oil mixture all over the chicken breast.  Leave to marinate overnight.  The next day place your chicken and marinade in the slow cooker on low for 6 hours.  It smells amazing and taste even better.

Hi Sherry, I must be the only person in blogland without a crock pot, but this recipe sounds so delicious and looks so easy that I may have to give in and get one. Lime, garlic and olive oil are great together! Linda

I missed something somewhere. This may sound like a dumb question, but do you place the chicken with the marinade in the slow cooker? Thank, love youe blog.

Evelyn, Yes, place the chicken and marinade in the crock pot. I updated the recipe to state this. Thanks for pointing that out.
