Pumpkin Cake Delight

This recipe was so simple I had to try it!  I was curious if it would work, because it has only three ingredients!  

Ingredients:
1-18.25 oz. box of yellow cake mix
1-15 oz. can of Pumpkin Pie Filling ready to use
1/2 cup of butter, melted

1. Pour the pie mix in the bottom of a loaf pan (could use a 8 x 8 inch).  *Note: the recipe called for a 9" x 13" baking dish.  I used this and I thought a smaller pan would work better.  The cake was also pictured made in a loaf pan.  
 

*Note:  I could only find a 15 oz. can of pumpkin in our grocery.  The Pumpkin Pie Filling was not on the shelves yet.   Just add these spices to a can of pumpkin to make it a can of Pumpkin Pie Filling:
3/4 cup of sugar
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg



2. Sprinkle the yellow cake mix over the pie mixture.

3. Then pour the melted butter over the cake mix.  Bake at 350 degrees for about 30-40 minutes.  Test it by using a knife and see if it pulls out clean, then it's done. 

The smell of this in the oven was like a pumpkin spice vanilla candle!  The kids said it tasted amazing too.

That sounds and looks so yummy! I have a pumpkin bread recipe that is delicious. When I start making them I don't stop until Christmas! They go fast around here.

I have made this for years as an alternative to pumpkin pie, although I add eggs to make a custard filling. It also works very well with orange cake mix, lemon cake mix and spice cake mix. So easy.

I just found your blog today and I am LOVING it :-) My sister found a similar easy recipe for pumpkin muffins - one can of pie filling and one box spice cake mix (only 2 ingredients!) - mix and bake in muffin tins. They really are delicious (I won a work pumpkin recipe contest with these last year :-) ) She says you can do lots of combinations - any can of pie filling and box cake mix, cherry pie with angel food cake makes a good cake too....

It is gooey with a crust on top. Not your traditional cake like cake at all, almost a pumpkin pudding.
