Spinach,Chicken, and Blueberry Salad

Love yourself this Valentine's Day with a easy, quick, and healthy salad.  I am joining Michael at Designs by Gollum for Foodie Friday.  Please click on the link to see all the other great recipes.  I created this salad for my own consumption.  I live in house surrounded by men (sons and husband) and sometimes a girl just doesn't want to eat like the guys. The nice thing about this meal is it has 4 ingredients.  When I have already cooked for the guys, then I can put this together for me and it isn't a lot time in the kitchen.
Ingredients:
Prewashed and packaged spinach
blueberries
Frozen precooked grilled chicken breast
Salad dressing of choice
Warm up the frozen chicken breast in the microwave. Place a bed of spinach on a plate. Wash blueberries and toss on spinach. Chop chicken breast up toss on salad. Put on your dressing of choice.  I used Good Seasons Italian.  Enjoy!

We've been eating lots of salads here post holidays! I love spinach and chicken salads especially. I agree on the girl aspect - I don't think my hubby would touch a blueberry but, oddly enough, he enjoys strawberries in spinach salads.

Sherry-Good for you--sometimes a girl just has to get away from the meat and potatoes! I like dried cranberries on mine, but I will try the blueberries--sounds delicious!

Now, that looks like an interesting recipe for chicken salad. I've never tried it with blueberries, and it looks good! Thanks for sharing...

Happy Foodie Friday!

I agree with you--a girl has her own foodie style. This salad looks like a winner.

This looks so different and so very delicious. It's a combination we've never tried, but now we certainly will.

I have made something similiar with strawberries. I love the idea of using blueberries instead!

I have been thinking of chicken salad all week. Your version would be much healthier than mine! I will try it.
