Biscuits & Gravy

When I think of what a Depression-Era recipe might be I think of something like biscuits and gravy.  I looked through my Depression Cookbook and sure enough this recipe was in there. 

A good gravy starts with the roux.  Here I made the roux out of butter and some of the leftover fat from frying the sausage in the skillet.  

Gravy for Biscuits or Potatoes
(recipe source: Stories and Recipes of the Great Depression of the 1930's)

1/4 cup of fat
4 Tbsp flour

Brown on slow heat until golden.  Gradually stir in 2 cups cold milk or water and cook a few minutes more.  Season to taste. (You have to stir constantly)

Leftover pork or pork sausage added for variation is excellent.

Fried hamburger, drained and added to the above gravy and served with any kind of potatoes, mashed, boiled, or baked, makes a very good meal.

Fresh side pork probably made the best gravy using fat from fried side pork.  Large families relied on this meal for good tasty food.

*Note: I just copied this recipe right out of the book.  Side pork is the same cut as bacon but not smoked/cured.

It still makes a tasty good meal in 2012!   My youngest son couldn't wait for me to take the picture he was ready to eat.

My go to recipe lately has been diced potatoes and onions sauteed in olive oil until just about done then I add sliced Eckridge sausage and finish cooking, adding salt, pepper, and garlic powder. Served with ketchup or Country Bob's Sauce (which is a barbecue sauce that is AWESOME on anything!). We love biscuits and gravy too!

Oh...My goodness! If it isn't the ultimate comfort food! I lived in East Tennessee for 13 years and there I enjoyed bisquits and gravy like never before. Here in Oregon folks just don't know how to make this delicious dish. My mouth is a bit homesick right now as it waters away pining for some of your ooey gooey gravy with plump and fluffy biscuits!

This is the way my MoMa made gravy! YuM!!! i understand your son wanting to get his fork into that plate!!! My family won't wait for photos to be taken...I have to beg and then only photograph MY plate! Ha!!! Thanks for reminding us of the simple pleasures...the charm of home!!!

Biscuits and gravy has to be one of my all-time favorite comforting things!! Now days it's more of a special thing for us, but I grew up on this stuff! There's just something about hot from the skillet, whitish-brownish gravy specked with bacon or sausage bits and black pepper over chewy biscuits that says "perfect fall morning"!
My husband is on vacation this week, and I think I need to make us some to celebrate. Thanks for posting this good recipe!

Yum! Biscuits and gravy is one of my "comfort foods". and this is exactly the way I was taught how to make gravy. It was a regular staple meal with my grandparents. So, I associate it with them and that always makes me happy! You are being featured this week for TTF. Thanks for sharing another great recipe with us at TTF. Have a fun day!

My ex husbands mom used to make this ( she was Italian and this is not Italian...its old time across the country I think :)

Sherry, Thank you so much for sharing this biscuits and gravy recipe. My mother always loved making it when I was little. There was 8 in our family so this was a regular on our menu. Loved the memories.
