Brambly Hedge Winter Tea

Brambly Hedge Winter Tea, The Charm of Home
Today I am sharing the last of my Brambly Hedge china.  This set is "Winter."  I have created a little tea with some grain-free Pumpkin Cranberry Muffins and a cranberry sauce.  I got this recipe from Practical Paleo but I added some carbs to it and took out the coconut.  So it wouldn't be all Paleo, but it is grain-free.

Gluten Free Pumpkin Cranberry Muffins
Pumpkin Cranberry Muffins
6 eggs
1/4 cup canned pumpkin
1/2 cup olive oil
1 teaspoon vanilla extract
1/4 cup honey
1/2 cup potato flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 cup fresh cranberries

Preheat oven to 350 degrees.

Whisk the eggs, pumpkin, oil, vanilla, and honey in a large bowl.  Mix in a separate bowl the potato flour, salt, baking soda, cinnamon, nutmeg, and ginger stir until well combined.  Add the wet to the dry and then gently fold in the cranberries.  
Scoop 1/4 cup of batter into lined muffin cups (natural parchment muffin papers work best) and bake for 35-40 minutes.

Cranberry Sauce
12 ounces of fresh cranberries
1/2 cup water
4 tablespoons honey
zest of one orange

In a medium sized saucepan simmer the cranberries with water until all of the berries have popped and the texture is gelatinous.  I added 1-2 more tablespoons of water to achieve this.  Add the honey to taste.  
Remove the mixture from the heat and add in the orange zest.  Allow it to come to room temperature before refrigeration.

The potato flour gives these muffins a nice texture.  They are cake like and moist almost like a bread pudding.  This recipe will work for you if you have to eat for auto-immune conditions and you avoid nuts.  I have to eat grain and nut free due to allergies.  I will be working on adapting many more recipes for my allergies and will share them when I have success!
