It is really very similar to the Victoria Sponge in construction but, I am sure the cake tastes a bit different. So to create this I just used a store-bought angel food cake and cut it in half horizontally. I spread berry jam on the first layer (I used raspberry) and then I spread the cream cheese and whip cream icing, recipe follows. I layered the top of the cream icing with flat sliced strawberries. Then I placed the top layer of the angel food cake on that and covered it with the icing and placed berries, strawberry buds and leaves, mint, and violets. Everything that went on the cake is edible (and organic).
It is a really pretty cake it even slices up pretty. So it's easy and fun to make. No one really wanted to eat the leaves they just removed them. My family (all guys) tells me I am feeding them "twigs and berries" again. It is all about the visual, and yes the guys do get that....surprisingly. I thought the key to it looking right in the pictures was the icing. So I searched the pinterest boards for awhile to come up with the right icing.
Cream Cheese and Whip Cream Icing
Ingredients:
8 ounces of cream cheese, room temperature
1 1/2 cup heavy whipping cream
1 cup sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
In a medium bowl beat whipping cream with a electric mixer till stiff peaks form; sit aside.
In a large bowl combine the cream cheese, sugar, salt and vanilla. Beat until smooth and then fold into the whipping cream.
Yields enough to ice an entire 8-10 inch round cake (I could have halved the recipe for this cake.)

I am going to make this cake for a dinner this weekend.
It looks so pretty and I have never in my life made a real angel food cake from scratch. I remember watching my sweet grandmother make one when I was a child.
