Orange Marmalade Cake

I am taking a step back in time today for tea.  I am having tea on my great-grandmother's hoosier cupboard.

This cupboard is perfect to serve a casual tea.  Hoosier cabinets were maufactured in the 1920's and they were made for storage and workspace in the kitchen.

Orange Marmalade Cake:The Charm of Home
My cake was adapted out of one of my favorite new cookbooks, Honey & Jam by Hannah Queen.  The recipe was Peach & Tomato Preserves Cake (pg.116).  I didn't make the preserves called for in the cake; I did make an orange marmalade topping, recipe follows.  This little butter cake is a winner!  It was so moist and delicious you would never make a boxed cake again. I also liked that for tea, it only made one 8-inch layer.  

Orange Marmalade Cake

For the cake:
1 1/2 cups (170 g) all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspon salt
1/2 cup (1 stick/115 g) butter, room temperature
1 cup (200g) granulated sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
1/2 cup (120 ml) whole milk
Topping:
1/3 cup (80 g) orange marmalade 
4 tablespoons (30 g) confectioners sugar
1/2 tablespoon butter

Preheat the oven to 350˚F (175˚C).  Spray a 8-inch (20-cm) round cake pan with non-stick baking spray.
In a medium bowl combine flour, baking powder, and salt. In the bowl of an electric mixer cream the butter and the sugar, about 3 minutes.  Add the eggs one at a time scraping down the sides of the bowl after each egg.  Beat in the vanilla.  Add alternately the flour mixture and the milk to the mixer bowl, beginning and ending with the flour.
Pour the batter into the preapared pan and bake until a toothpick inserted in the center comes out clean, 30-35 minutes.  After 10-15 minutes turn cake onto a wire rack and allow it to cool completely.

For the marmalade topping:
Heat marmalade in a small pot over low heat until melted; whisk in confectioners sugar and 1/2 tablespoon butter until smooth.  Pour warm glaze over top of cake allowing some to drizzle down the sides. Cool before slicing.  
I actually served this cake a little warm and it was amazing!

I really love the cabinet!! And the tea cup is very pretty, but is that a single serve teapot? I ask because I have a few of them myself and today I made a small tea cozy for my little teapots!
I will be trying this little cake because we love marmalade and the portion is perfect for the two of us or for a lunch tea.

Roxy, that teapot isn't single serve. The pictures don't really show it's true capacity because, I would think it would hold 6-8 servings. It is big and round. Thanks for stopping by!

Your Hoosier cabinet is a treasure! We have my husband's grandmother's, as well, as is well loved. The cake recipe sounds delicious and I bet makes your home smell heavenly.
