I have a treat for you today! I was asked to review this new cookbook by fellow blogger Jennifer McHenry of Bake or Break. This cookbook is wonderful! I have very seldom found cookbooks that I want to cook all the way through but, this was one of those cookbooks!
The cookbook is titled Quick-Shop-&-Prep 5 Ingredient Baking. My favorite thing is to bake, and this is exactly what you get with this delightful cookbook. I also love the concept of offering recipes that are so easy to whip up with the things you have already in your pantry. That has always been a big requirement to my favorite recipes. Her concept is dessert recipes that require 5 basic ingredients that you already have on hand in your pantry (flour, butter, eggs, and sugar), and a quick shopping trip to add from two up to five ingredients to create delicious treats that pair perfectly with you favorite cuppa. With 80 recipes total, Jennifer delivers your favorite treats with a twist that were perfect to spice up my tried-and-true recipe collection.
I am allowed to share up to three recipes from the cookbook and I will be doing that. I am sharing 3 recipes in three different posts because I want to get the word out about this cookbook, it is really a good one!
The recipe I choose today was the Triple Chocolate Chip Skillet Cookie. It is so easy and smells like a bakery coming right from your oven. The whole recipe can be mixed and baked right in the same skillet how easy is that? I loved it!
Ingredients:
1/2 cup (113 g) unsalted butter, softened
1 cup (200 g) firmly packed light brown sugar
1 large egg
1 teaspoon (5 ml) vanilla extract
1 1/4 cups (150 g) unbleached all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (85 g) semisweet chocolate chips
1/2 cup (85 g) milk chocolate chips
1/2 cup (85 g) white chocolate chips
Preheat oven to 350 degrees F (180 degrees C).
Place the butter in a 10-inch (23-cm) ovenproof skillet. Cook over medium heat until the butter has melted. Add the brown sugar and stir until the sugar dissolves. Remove the pan from the heat and allow the butter mixture to cool for about 10 minutes.
Add the egg and vanilla to the cooled butter mixture, and stir until combined. Add the flour, baking powder and salt, and mix just until combined. Stir in the chocolate chips. Spread the dough evenly in the skillet.
Bake for 15 to 20 minutes, or until golden brown. Serve warm. Can top with a few scoops of ice cream.
Serves: 8-10
My family loved this cookie recipe. Mixing and baking in the skillet, made the clean up and actual time involved to make the cookie so much faster and easier. A fantastic alternative to baking the standard chocolate chip cookie recipe. The whole family found it delicious and fun in this skillet cookie shape.
I gave this cookbook a fantastic review because I really loved it! I will bake two more recipes from this cookbook and share them in the next few weeks. It was just that practical and easy a cookbook to use. Gotta love anything that makes being in the kitchen more fun!
