I found this quick bread recipe that is a good alternative to the Amish Style cinnamon bread, but instead of using yeast and letting it rise you can just mix and pour this batter. This is so much easier.
Ingredients:
1 cup butter, softened
2 cups sugar
2 eggs
2 cups of buttermilk, or 2 cups milk with 2 tablespoons vinegar
4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
Cinnamon sugar mixture:
2/3 sugar
2 teaspoon cinnamon
Cream together butter, 2 cups sugar, and eggs. Add flour, milk, baking powder, and baking soda. Put 1/2 the batter into greased loaf pans (1/4 in each pan first). Mix in a separate bowl the 2/3 cup sugar and cinnamon. Sprinkle 3/4 of cinnamon mixture on top of each batter already poured in pan. Add the remaining batter to each pan. Sprinkle with the last of the cinnamon sugar mixture. Bake at 350 degrees for 45-50 minutes. Cool 20 minutes before removing from pan.
Yield: 2 loaves
