Today I am happy to join Sandi at Rose Chintz Cottage for her Savour the Summer Tea Party. I have more reasons than most to savour summer tea. It is the one of the two times of the year that I can make chocolate chip cookies and eat them!
I used my Summer Brambly Hedge tea set. I have shown it off before here.
I have a new Brambly Hedge plate that I will highlight today. It's The Wedding, it deemed fitting to show it off in June.
Now about the chocolate chip cookies, these aren't your normal chocolate chip cookies because I can't eat the normal chocolate chip cookie. These are Sweet Potato Chocolate Chip Cookies. Some would call them "clean eating chocolate chip cookies." They are allergy friendly. I had to get a close up to show you how chewy and nice the texture is with these cookies.
The batter was even really "normal" looking. I was really pleased with the texture. After three years of searching I have finally found a chocolate chip cookie recipe that works for my allergies. So it is a wonderful reason to have a cup of tea and savour summer.
I will share the recipe for any of you that have allergies and are in need an option to try.
This recipe is dairy, soy, tree nut, coconut, and wheat/gluten free.
Sweet Potato Chocolate Chip Cookies
Ingredients:
1 cup of sweet potato (1 medium), baked and then mashed
1/4 cup of potato flour
1/4 cup oil ( I used home rendered beef tallow) (any oil would work)
1 egg
2 tablespoons honey
1/2 teaspoon vanilla
1/2 teaspoon cocoa
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup Enjoy Life Chocolate Chips + 2 teaspoons
Preheat oven to 350 degrees.
I baked my sweet potato the night before and then put it in the fridge. Mash the sweet potato the next day to prepare for the recipe.
Mix the dry ingredients, potato flour, cocoa, baking soda, baking powder, and salt.
In another small bowl mix egg, honey, and vanilla.
Mix in with the wet ingredients the sweet potato, the oil, and then the chocolate chips. Then mix the wet ingredients with the dry.
Scoop in tablespoons onto parchment paper and a baking sheet. Bake for 13 minutes.
Yield: made 13 cookies
(the recipe can be doubled)
The oil you use will give the cookies a good deal of flavor. If using olive oil I would use light tasting olive oil. The beef tallow did give the cookies a savoury flavor much like the chocolate and bacon flavor sweets I have been seeing on the internet. The cookies are much less sweet than a normal chocolate chip cookie. Sweetened only with the honey and the chocolate chips they are sweet and savoury which is a really nice combo. The texture is amazing, chewy and satisfying.

ReplyDeleteYour chocolate chip cookies look good, Sherry. I am blessed that I don't really have an allergy to anything except pork. Although I have noticed lately that when I eat certain foods my tummy gets upset. I'm keeping my eye on it. You know I love your Brambley Hedge. The Wedding plate is very cute and another wonderful piece for your collection. Your boys probably like them too with their whimsical patterns. ReplyDeleteA splendid post with a recipe I will have to definitely try!! I'm attempting to stay as gluten free as possible and that's hard when I love tea treats and cake. I never had issues with my diet until menopause - then I developed severe gluten intolerance. It's under control but a recipe like this keeps my teatimes happy. No wonder you were featured at Kathy's Return to Loveliness this week.
