Over the holidays I made Slow Cooker Ham and Beans for a relative. It is a great dish to make during this cold weather and it can sit in the slow cooker and be hot and ready to eat for an extended period. I paired it with cornbread muffins for a nice hot meal.
Ingredients:
1 lb. of Great Northern dried beans
1 large sweet onion
3 large carrots, peeled and sliced
1 lb. ham, chopped
3 cups chicken stock
3 cups water
fresh ground pepper
Salt
Rinse and sort beans soak in water overnight. Rinse beans well, again, and place in a slow cooker that has been sprayed with a non stick spray.
Add onion, carrot, and ham. Cover all with the water and chicken broth. Cook on low 6-8 hours until beans are soft and carrots are tender. Add fresh ground pepper and salt to taste.
Stir and serve with cornbread.
