Blackberry Cobbler

Still reaping the benefits of the blackberries, I made my all time favorite blackberry dessert, Blackberry Cobbler. 

Ingredients:
3-5 cups of blackberries
1/3 cup flour
1 cup sugar
1 tablespoon lemon juice

Preheat oven to 425 degrees.   Stir together berries, flour, and sugar in a large mixing bowl. 
Sprinkle with lemon juice. Spoon mixture into a lightly greased 8 or 9-inch baking dish.   Prepare crust.
Crust:
1 3/4 cups all-purpose flour
3 tablespoons sugar
11/2 teaspoons baking powder
3/4 teaspoons salt
1/4 cup shortening
1/2 cup whipping cream
1/2 cup buttermilk
2 tablespoons butter (melted)
1 teaspoon sugar

Combine first four ingredients; cut in shortening with a pastry blender until mixture is crumbly.  Stir in whipping cream and buttermilk just until blended.   Spoon 9 mounds of crust over berries.  Brush with butter and sprinkle with 1 teaspoon sugar.  Bake at 425 degrees for 30 minutes or until browned and bubbly.  Serve warm with ice cream if desired.  
Serves: 9

The blue transferware I have used today is Lochs of Scotland by Royal Warwick.
