It is wonderful summertime and I am taking advantage today of the fresh peaches in the grocery. I made a peach cake with a caramel sauce that is a family favorite!
This cake is so humble to look at but so huge on taste. It is really hard to get a picture of it that does it justice, but I kept trying.
This picture might be the best to show you how gooey this cake is! It is also extremely easy to make, most of the ingredients are already in your pantry.
Caramel Peach Cake with Caramel Topping
Ingredients:
2 1/2 cups sugar
3 eggs
1 1/2 cups vegetable oil
3 cups all-purpose flour
2 teaspoons vanilla
1 cup chopped pecans
2 1/2 cups sliced peaches, fresh
1 tablespoon of fresh lemon juice, tossed with fresh peaches
Preheat oven to 350 degrees. Cream together sugar, eggs, and oil. Add flour; mix together until well blended. Add vanilla, nuts, and sliced peaches already mixed with lemon juice. Spread into a lightly greased and floured 13 x 9-inch baking dish; bake for 45 to 60 minutes. Cake is done when toothpick comes out clean. When cake is done, pour hot caramel topping over it.
Caramel Topping
1 1/2 sticks butter (3/4 cup)
1 cup of packed brown sugar
2 tablespoons milk
Heat all ingredients together over medium heat. Bring to a boil, stirring constantly. Let boil about 2 minutes. Pour over warm cake.
Pour a big cup of coffee and enjoy!
