Cheese & Bacon Quiche

Cheese & Bacon Quiche: The Charm of Home
I made a quiche this weekend.  I haven't made one for awhile and the family was more than happy to taste it for me.

It was a cheese quiche because it was vegetarian but, I added bacon for the guys.  They raved about it.  Seems funny to get guys to love quiche but they do.

Ingredients:
5 large eggs
2 cups half-and-half
1/4 teaspoon salt 
1/4 teaspoon pepper
4 ounces cheddar cheese, shredded (1 cup)
2 tablespoons onion, chopped
1 tablespoon minced fresh chives
1 ready made pie crust ( I use Pillsbury.)
4 slices bacon, cooked crisp and crumbled

Adjust oven rack to lower middle position and heat oven to 350 degrees.  Place pie shell into pie pan and shape edges as desired.  Prick the bottom of the crust with a fork. Whisk eggs, half-and-half, salt, and pepper together in a large bowl. Stir in cheddar, chives, bacon, and onion.  Transfer filling to pie shell just filling but not overfilling.  
Bake quiche until top is lightly browned, center is set but soft, and knife inserted comes out clean.  Bake 40-50 minutes.  Let the quiche completely cool.  May cover with plastic wrap and refrigerate.

  4. I have made quiches in the past using this same basic recipe. I love them because they are easy and delicious. I like your idea of using the chives...it adds flavor and a really nice color :)
