It is just about blackberry season! I love blackberries and I always make cobbler every summer but today I decided to try something I have never done. I baked a pie in a cast iron skillet! I have always wanted to try this and it was super easy.
The crust cooks up wonderful in the cast iron. It was a blackberry apple pie and everyone enjoyed it.
Blackberry Apple Pie
Ingredients:
4 apples, peeled and sliced
2 tablespoons butter
1/3 cup packed light brown sugar
2 tablespoons corn starch
1/4 teaspoon salt
5 cups fresh blackberries
1 teaspoon vanilla extract
1 Pillsbury pie crust
1 egg white
2 teaspoons decorator sugar
Preheat oven to 400 degrees F.
In a 10-inch skillet add butter and saute the apples, brown sugar, corn starch, and salt. Saute the apples until just tender 7 minutes. Stir in the blackberries and cook until they begin to soften and release their juice, 2-3 minutes.
Remove from heat, stir in the vanilla, and let cool to room temperature.
Prepare the cast iron skillet (I used a a 9-inch skillet) by placing the room temperature ready made pie crust in the bottom of the skillet and pierce the bottom of the crust with a fork in a few places. Pour the pie filling into the bottom crust and then unroll the top crust. Take the top crust and overlap it with the bottom crust around the edges and crimp in the fashion you desire to seal the crust for baking. Brush the top of the crust with egg white and sprinkle with decorator sugar crystals.
Bake about 25-30 minutes until golden brown and bubbly. Transfer the pie to a wire rack and let cool for 1 hour before serving.
Serves: 8
