I made these wonderful scones to go with my tea this week and then I didn't like the pink and the red in the shot together, so I unconsciously edited them out of the tea shots. They were eaten with no complaint by the men in the house. I told the guys that they were supposed to be made with white chocolate chips but, my one son assured me that chocolate chips were just perfect and could not be improved upon.
Strawberry and Chocolate Chip Scones
Ingredients:
3 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
6 tablespoon butter, cut into chunks
6 ounces chocolate chips
1 1/2 cups chopped fresh strawberries
3/4 cup milk
1 large egg, beaten
Preheat oven to 375 degrees. Spray wells of scone pans with baking spray. Set aside. In a large bowl combine flour, sugar, baking powder, and salt. Using a pastry blender cut butter into dry ingredients until mixture resembles coarse crumbs. Add chocolate chips and strawberries, stirring well. In a small bowl combine milk and egg. Add milk mixture to flour mixture until dough forms. If mixture seems too dry may add more milk a tablespoon at a time to adjust. Using a tablespoon divide dough among prepared scone pan. Bake until lightly browned, 18 to 20 minutes.
Yield: 24 scones

ReplyDeleteWell you can bet I will be trying those scones as soon as I buy more choc. chips. (Ate all the others, lol.) If I like the scones which I'm positive I will, will make a note to make them again in July when Ore. strawberries arrive in my local stores. (I live in WA state.) I'm sure all you Texas, southern, midwest, etc. blogger girls may not agree with me, but Oregon has the absolute best strawberries!
