When I walk by the peaches in the grocery store I can't help but smell them. That is how I know it is time to make cobbler because the peaches are ripe, in season, and they smell delicious! This is your classic cobbler made from scratch and don't forget the scoop of ice cream!
Ingredients:
9-12 fresh ripe peaches (peeled and sliced)
1/2 cup flour
1 cup sugar
1 teaspoon vanilla
Preheat oven to 425 degrees. Stir together peaches, flour, and sugar in a large saucepan. Bring to a boil over medium heat; reduce heat to low, and simmer10 minutes. Remove from heat; stir in vanilla. Spoon mixture into a 8 or 9-inch baking dish. Prepare crust.
Crust:
1 3/4 cups all-purpose flour
3 tablespoons sugar
11/2 teaspoons baking powder
3/4 teaspoons salt
1/4 cup shortening
1/2 cup whipping cream
1/2 cup buttermilk
2 tablespoons butter (melted)
1 teaspoon sugar
Combine first four ingredients; cut in shortening with a pastry blender until mixture is crumbly. Stir in whipping cream and buttermilk just until blended. Spoon 9 mounds of crust over peaches as in picture above. Brush with butter and sprinkle with 1 teaspoon sugar. Bake at 425 degrees for 30 minutes or until browned and bubbly. Serve warm with ice cream if desired.
Serves: 9
* Note- I dotted my peaches with butter like a pie and the filling was too runny. Use the melted butter on the crust as per instructions.
