Hubs got a request in at the dinner table this weekend because he's the Dad and his pick was meat and potatoes all the way! Who would have guessed? He asked me to make hash browns. These are so easy and so good and actually healthy, I don't know why I haven't made them in so long.
Ingredients:
4-5 potatoes, washed, and diced up
1 onion, peeled and chopped up
3-4 TBSP of olive oil
salt to taste
Heat a cast iron skillet and the olive oil on medium heat. When it sizzles with a drop of water it is ready. Throw in your diced up potatoes and onions and let brown. Don't put a lid on it and turn over the potatoes and onions frequently. Cook like this for around 30-35 minutes.
Serves 4
We had this with grilled ground chuck that tasted more like steak and garden fresh green beans!
