Do you have a comfort food? For me it was always meatloaf and potatoes. I have been trying to get more veggies into all of our food so, I tried a few new things with my favorite recipe. The first thing I did was I tore up some spinach leaves and added it to the meatloaf. I also wanted to take out the 1/2 cup of milk and I added in it's place sugar free apple butter. Be warned, it was a sweet meatloaf, but it tasted very good. My recipe already had brown sugar in it. I found this meatloaf recipe in a church cookbook. I like using recipes out of church cookbooks because you know the cooks have made them and liked how they turned out.
Ingredients:
1 lb. hamburger
1/4 cup chopped onions
1/4 cup dry bread crumbs
1 tsp. salt
1/2 tsp. pepper
1/2 tsp ground sage
2 eggs, beaten
1/2 cup milk ( I substituted apple butter)
2 tbsp. brown sugar
1/2 tsp. dry mustard
Optional: I also added a 1/2 cup of torn baby spinach
Topping:
1/4 cup ketchup
green pepper rings
Take all ingredients and mix well. Then pour ketchup down the center of the loaf and top with several pepper rings. Bake at 350 degrees for an hour.

ReplyDeleteSneaking in veggies is a great way to add them to your families meal. I get creative too and never mention a thing about it and they seem to never notice. Your meal looks so colorful and isn't is great to use the oven again and make those comfort foods?

ReplyDeleteSherry, looks devine. My favorite, is hard, but I would have to say pasta. I put anything that I can in my sauce. Especially love adding squash and zuccini along with the norm. My Mr. does not like meatloaf, maybe your's will be the ticket!

ReplyDeleteOh, we love a good meatloaf dinner in our home too. I have the two cookbooks that my church put together when I was growning up. You know someone worked really hard typing up all of those recipes on a typewriter!! Thanks for sharing your recipe!

ReplyDeleteI love comfort food...just like mom made. I actually cook that way too about half the time. Other times, I'll do an interesting salad and piece of grilled fish. We love fruits and veggies. I actually would rather skip the meat! I do like meatloaf and this sounds yummy. My comfort food is probably chicken and dumplings, which my kids say I always fix with green beans and coleslaw.

Sherry, you posted comfort food the day I served meatloaf and mashed potatoes. We use the same basic recipe and I always add ketchup on top. I always serve veggies as a side. A recipe both my husband and I grew up on and I still serve to my family. Delicious. Great post.

when you add the milk to the meat mixture, what exactly does it do for the meat? flavor, binding agent etc.? really just curious never have I used milk before. I have not made meatloaf in many years now wow I think we just might have this one day this week. Thank You so much for the wonderful recipes and history we all can see and read. I love the old days. Things might have been hard but the standards was different back then, Morals, values family was important, to work hard take care of each other every one then chores (as did I when I was a child) today most do not know what work is, or getting up before dawn to do chores go to school mind your ma and pa. not like today. thank you so much for the trip down memory lane. I am grateful for the wonderful life I do have now and when I was a child. God Bless!!
