Blackberry Lime Pie

Blackberry Lime Pie: The Charm of Home
We are rolling into the finish line with summer.  I heard several groans...insert my children here, rolling eyes. Yes, we are less than a few weeks from back to school!  Oops, did I sound a little excited.;)  I am a little frayed from the constant kitchen duty.  So this week I am just popping in with a single post.  I managed to bake up the last of our very own blackberries.

Blackberry Lime Pie: The Charm of Home
I loved the flavor combo in this pie.  It is a Blackberry Lime Pie.  Here is the recipe I used.  This pie was cut warm so it isn't picture perfect.  I am never patient enough to wait for it to look perfect.

Ingredients:
3 pints of blackberries ( around 1 1/2 pounds)
1 cup granulated sugar
3 tablespoons cornstarch
2 tablespoons lime juice
1 tablespoon lime zest
2 tablespoons butter
1 package Pillsbury pie Crust
1 -2 tablespoons of coarse sugar

Preheat oven to 375 degrees F.  Place oven rack to the lower third of the oven.  Place out the ready made pie crust on the counter to warm up. 
Combine blackberries, sugar, cornstarch, lime juice, and lime zest toss evenly to coat the berries and let this sit 20 minutes, stirring occasionally.  
Place your ready made bottom crust in pie shell and pierce the bottom of it with a fork.  
Pour in the blackberry mixture when ready.
Place top pie crust on pie and crimp edges as desired.  Cut some slits in the top for venting and sprinkle with coarse sugar.
Bake at 375 degrees for 45 minutes and then turn the oven up to 400 degrees for 15 more minutes.  If the crust gets too brown you can place foil or a pie shield on pie.

Wow, that pie looks amazing. I agree with Pura, the crust is perfect. And your photography is spectacular. I made a pie also but I cheated, I sued the Pillsbury pie crust. You put me to shame.
