I am so happy to tell you about a great product today called Lily's Chocolates.  Lily's Chocolates is delicious stevia-sweetened chocolate.  Founded in 2011, it has quickly become a leader in making all-natural, indulgent chocolate sweetened with stevia.  Stevia is a natural plant based sweetener that is virtually calorie free and low on the glycemic index.

Lily's Chocolates also have a dark chocolate premium baking chip too.  So you can bake delicious desserts for your loved ones on a special diet also.  The chocolate has a smooth creamy texture and rich chocolate taste.  It baked up perfectly in this Pumpkin Chocolate Chip Cookie recipe I made.  It is so nice I don't have to leave a person off the menu who has special diet needs.  My oldest son can eat sugar but, he declared this cookie his new favorite chocolate chip cookie and the whole container of cookies disappeared to his room! The only thing that came back was the empty container and crumbs.  This was a soft cake like cookie that was chocolately sweet with Lily's Chocolates
Try this recipe out for yourself:


Pumpkin Chocolate Chip Cookies

Ingredients:
1/2 cup canola oil
1 cup 100 % pure pumpkin puree
1 cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon milk
1 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
2 cups flour
1 3/4 cups Lily's Dark Chocolate Chips
1 tablespoon cocoa

Preheat oven to 350 degrees F.  In a medium bowl combine oil, sugar, pumpkin, egg, and vanilla.  In a small separate bowl combine baking soda and milk and then mix with pumpkin mixture. In another bowl combine cinnamon, baking powder, salt, and flour.  Mix the wet ingredients into the dry scraping the sides of the bowl as necessary to mix, but don't over mix.  Put the baking chips into a medium bowl and toss with the cocoa.  (Coating the baking chips will keep them from sinking in the batter.)  Fold the chocolate chips into the batter and add to the batter the cocoa. Let batter sit 10 minutes.  Scoop the dough by tablespoons and place 2 inches apart on baking sheet.  Bake 11-12 minutes.  Let set for 10 minutes on cookie sheet then place on cooling rack.    
Yield: 36 cookies.

This is a cake like cookie with a fluffy texture.  Delicious for a treat anytime.
